You bet it is...and we do it whenever there aren't any "special needs" for
the site, such as unique POP or FTP service needed for that domain.  
Just be sure that DNS points both domains to the same IP, and just fill in
the blanks in Apache, as per the docs:
http://www.apache.org/docs-2.0/vhosts/ip-based.html

Works really well.
