How about approach of races/guilds.

You start by selecting race that modifies stats and maxstats
(maximum stats attached to race seems resonable if thinking
about humans vs. elfs vs. orcs, the basic structure of body
determines the capasity how much stat can develop). Starting 
items may also exist by race.

When entering game you decide the guild (fighters,assasinates
(ninja),thieves,healers(cleric),mages,..). You enter to the
guild and if accepted you get some items (eg. broadsword and
platemail for fighters, books for mages, and maybe some stat 
potions). It maybe limited for balance in that way player
can belong one guild at time, so to change guild player
have to sigoff from guild. And in guild when you get experience
and make quests get can advance and get new items and quests.

Somewhat this kind of systems exists in omega (but no races),
if someone is interested how it works.

btw. I don't mentioned priest here, and reason is that I see
the status of priest is somewhat problematic because there
exist no gods.
