You can always go Alt-F2 (or Ctrl-Alt-F2 if in graphic mode) and run fdisk
/dev/hd[ab]. You'll need to first make the devices by using:
mknod /dev/hda b 3 0
mknod /dev/hda1 b 3 1
mknod /dev/hdb b 3 64
mknod /dev/hdb1 b 3 65
..etc. Make your partitions, then reboot, since RH Install won't notice
the changes.
