nice lightweight like qmail? *cough*
every qmail install i've seen took up 8mb of ram, besieds spawened
processes for connected clients.. even sendmail isn't that bloated.

standard UW imap/pop work great for me.  and you can MTA that on sendmail,
postfix, exim.. whatever floats your boat. :)
