This is a question that seems to come up from time to time, and always a good thing to take a look at is, the "Hard Disk Upgrade Mini How-To" : http://www.faqs.org/docs/Linux-mini/Hard-Disk-Upgrade.html It's a bit old, but it is still quite comprehensive, and shows different options, depending on exactly what you want to do.
