This is non-intuitive.  I propose that shops never reset, but that stock
is rotated at a rate equivalent to the reset rate.  But only do this 
while the player is not present, or on first player return; there would
be nothing so annoying as selecting which items to buy only to find it
rotated as you walk back up to it!  ;-)

Now, the "rate equivalent to the reset rate" would depend on the number
of random items in the shop.  If the map reset time is one hour, and
only ten minutes have passed on the map without a player, then one sixth
of the items, randomly selected, should be re-determined.

It seems more efficient to do this invisibly rather than create a shop
assistant friendly elf that scoots around between a locked store-room
and the display area.  The latter would look fun though.  ;-)
