The POP and IMAP servers that come with RH do not really require any setup
other than enabling them in /etc/inetd.conf and giving it a HUP. Which Red
Hat might already have done for you.
If you're not running your own domain, the sendmail that comes with Red
Hat my already be able to send outgoing Email for you.
Anything more than that, I'd recommend installing Qmail, which you can get
at ftp.qmail.org. The documentation that comes with Qmail is more than
enough to get you going. Qmail is more secure and infinitly easier to
setup than Sendmail is.
